Holy moly, Christmas is already next week! It’s been such a busy holiday season for Suz and me, with the two roadtrips and the big move out of Los Angeles (me up to Vancouver and Suz home to Alabama for a bit), that we haven’t had a chance to get many recipes out lately.
During our roadtrip from Los Angeles –> Colorado –> Vancouver, Christmas themes lattes finally hit the coffee shops all over the place. We were consistently stopping off each morning to grab my guilty pleasure around this time of year, the Eggnog Latte.
I seriously love these things. So much so that last year, I made my own version of it. But since I’m now up in Vancouver and walking everyday to work, I wanted to find a more portable way to bring my own eggnog into work for lattes.
Inspired by something I saw from our friend’s at Pete’s Paleo and their gut healing kit, the answer hit me all at once. Why not make eggnog in gummy form? That way I can still have my lattes once I get to work AND heal my gut in the process.
They came out perfect. Nice and firm for a go to snack and will still melt easily when added to hot coffee. I can’t imagine NOT making these over and over again. Don’t forget to enjoy these with our Paleo Shortbread as well!

Instructions
- Heat egg nog in a medium saucepan over medium-low heat, stirring occasionally, until mixture begins to bubble around the edges.
- Pour heated egg nog into a blender and add gelatin.
- Blend on high to combine gelatin and egg nog.
- Remove lid from blender and allow to cool for about 15 minutes.
- Pour egg nog and gelatin mixture into silicone molds or 9x9 baking dish and refrigerate overnight.
- Enjoy in coffee or as a standalone snack!
