It’s time for Valentine’s Day and what is a more classic and simple recipe to make for that special someone than chocolate covered strawberries? I’m actually surprised that I haven’t posted something like this sooner. It’s such a simple way to make a great dessert that is sure to impress.
What’s a little different about this method is that Suzanne likes to use toothpicks in the strawberries while dipping in chocolate to not only keep your hands clean during the process, but she then twirls the strawberry to knock off any excess giving it a nice smooth and even texture.
Like many simple desserts, you can customize the toppings portion. I personally like the white chocolate drizzle (I used the very tasty Paleo White Chocolate recipe from Civilized Caveman) but you can also do crumbled bacon, chocolate chips, or even crumbled walnuts. All are delicious and are sure to please.
- 1 dozen fresh strawberries
- 1 cup enjoy life chocolate chips
- 1 tbs coconut oil
- 1 batch paleo white chocolate
- finely chopped pecans
- 2 strips bacon, cooked and crumbled

- Rinse strawberries under cold water and pat dry. Set aside.
- Using a glass bowl or double boiler, melt dark chocolate and white chocolate (using separate bowls of course) over low heat. You don't want to rush this or the chocolate will burn.
- While chocolate is melting, mix coconut oil with white chocolate until evenly incorporated.
- Remove chocolate bowls from stove and allow to cool slightly
- While chocolate is cooling, place a toothpick through the top of each strawberry.
- Dip each strawberry in chocolate using the toothpick and twirling off any excess chocolate.
- Place strawberries on a sheet pan lined with parchment paper.
- After each strawberry, add topping of your choice (white chocolate drizzle, crumbled bacon, walnuts, etc)
- Once all strawberries are decorated, place sheet pan in freezer for about 10 minutes to allow chocolate to set up. It will be finished once all the sheen is gone from the chocolate.
- Remove from freezer and place in refrigerator until ready to eat.
- Enjoy!
