A restaurant that I attend on a regular basis sometimes serves a whipped avocado topping for their amazing burgers. The texture is just so light and creamy much like a mousse so I figured, why not add some cacao powder and some other goodies to a whipped avocado and try to make a great mousse with plenty of good fats and minimal sugars? After experimenting in the kitchen on a few different tries, I finally nailed it and this was the result. What’s even more amazing, is how simple it really is. You might want to double the recipe because it’s so tasty. 😉
- 2 ripe avocados, pitted
- 1-2 tbs coconut nectar, to taste
- 3 tbs 100% cacao powder
- 1 tbs vanilla extract
- 1 tsp cinnamon
- 3 tbs almond milk (optional)
- Combine all ingredients in a food processor and blend until desired consistency is reached, stopping every couple minutes to scrape down the sides
- Serve immediately or chill for a few hours to allow mousse to set up
- Enjoy
