One of my favorite ways to eat chicken is in the form of wings. Of course the most classic way to eat wings is Buffalo style which is merely a mix of butter or ghee and hot sauce. This is where the Buffalo Chicken Salad Lettuce Cups were born.
Since I’ve been exploring a ketogenic diet in the past month or so, I’ve been eating chicken salad for lunch. It’s easy to make and fulfills my keto needs with protein and quality fats. And a simple addition of buffalo sauce helps to add in some variety and honestly, ramps up the flavor factor big time.
- 1lb cooked chicken, cubed (I use leftover baked thighs)
- 2 stalks celery, chopped
- ½ cup mayo
- 2 tbsp Franks Red Hot sauce
- 4 romaine leaves
- Add chicken, chopped celery, mayo and Frank's hot sauce to a large mixing bowl and stir to combine.
- Spoon chicken salad mixture into 4 romaine leaves and enjoy!
