It’s already May (can you believe how fast this year is going already?) and that means that Cinco de Mayo is right around the corner. In the past, we’ve always managed to put out some recipes to celebrate this day. To us, it signifies the start of grilling season and summertime and let’s face it, here in Southern California, there’s plenty of Latin influence in the food which makes it all the more fun to experiment with.
This post is compiled of our top ten recipes to make for your Cinco de Mayo celebrations, even if that just mean making dinner for your family, you’re sure to find something in here that will please everyone.
Blood Orange Mango Margarita ~ What’s a holiday without an adult beverage? This margarita is so simple yet delicious, and if you have kids running around, it’s just as easy to make a virgin variation as well. Simply omit the tequila and you’re good to go!
Chipotle Beef Barbacoa ~ We just posted this earlier this week, but it’s something Sean has wanted to make for ages. This smoky, spicy latin BBQ is perfect for making the night before and having ready for everyone on the big day. We used beef cheek for the added collagen benefit but a good sized chuck roast will work just as well.
Cinco De Mayo Taco Salad ~ This is one of our oldest recipe posts around. Not only does it contain a recipe for the taco salad but there’s recipes in there for an amazing guacamole AND a pico de gallo as well.
Cinco De Mayo Bacon Tacos ~ Following the success of Sean’s Ketogenic Pizza, we decided to try and use the bacon weave as taco shells for some carnitas. Just like the pizza, all you need is one taco and you’re satisfied. We used beef bacon for this one to tone down the porky-ness and it really comes out amazing. Especially with some guacamole and chipotle cheese.
Chorizo Skillet ~ We couldn’t believe how delicious this simple skillet turned out. It’s so versatile that it can be made for any meal. Perfect way to start out your Cinco de Mayo with this 20 minute breakfast skillet.
Chorizo Queso ~ One of our more popular side dishes since we posted it around the NFL playoffs this past year. The Chorizo Queso is a must for any Cinco de Mayo celebration. Get your Queso fix using all clean ingredients and use plantain chips in place of tortilla chips.
Colorado Green Chili ~ A latin inspired dish fused with the culture of Sean’s home state of Colorado. Colorado Green Chili or Chile Verde is another one of those dishes that doesn’t take a ton of effort and will still feed an army. The delicious and versatile Hatch Chile is the magic ingredient in this dish.
Grilled NY Strip Steak with Hatch Chile Chimichurri ~ There’s nothing quite like a really great chimichurri sauce. Especially when it’s lathered on top of a perfectly grilled steak. Instead of red chili flakes, we added some hatch chiles to really make the sauce stand out.
Crock Pot Carne Asada ~ While carne asada is typically made with flank steak or skirt steak, we like it made in a crock pot with an entire chuck roast. The slow cooked chuck roast gets incredibly tender, just make sure you pull it out of the crock pot before it reaches shredded beef tenderness.
Cinnamon Krunch Ice Cream ~ With any celebration, there has to be a beverage of some kind, but there also has to be a dessert. Think of this cinnamon krunch ice cream uses Steve’s Paleo Goods Cinnamon Swirl granola to add a little texture to the cinnamon ice cream. Think of it as a horchata (cinnamon rice milk drink) flavored ice cream.
