Now, while I usually try to stay away from most sweet treats, ice cream is one of my favorite past-times :). I’ll allow myself a treat now and then, and ice cream is pretty great fat-content wise, and making it with coconut sugar keeps the Glycemic Index lower. Which is great for Low Glycemic Index Therapy for epilepsy.
Ok, ok, I’ll get to the recipe 🙂 Here it is!
- 3 cups cream or coconut milk
- 6 egg yolks
- 1 tbs ground ginger
- 1 tbs vanilla extract
- 1/2 cup raw honey
- ⅔ cup pecans, chopped
- In a mixing bowl, whisk egg yolks together and then mix in remaining ingredients except for pecans. Let mixture chill if needed
- Once chilled, freeze your mixture in ice cream maker according to manufacturer's instructions.
- During the last few minutes of churning, add in pecans.
- Scoop ice cream into a glass container and serve immediately or place in freezer to harden to your liking.
Soak and dehydrate your pecans to enhance nutrition, flavor and crunch
