Last month, Suz and I completed our first Whole 30 Challenge in a couple of years. She was in Alabama and I was here in Vancouver, BC. It went so well, that we’re actually starting another one for the month of March. This recipe is perfect for anytime but especially for Whole 30 or 21DSD challenge that you might be involved with.
Throughout the challenge and beyond that even, I’ve been using mayo for just about everything. It really is one of my favorite condiments. It’s delicious on it’s own or you can add a spice and/or herb mixture to enhance it. Or, my personal favorite, make a solid ranch dressing for dipping chicken wings or veggies into.
Another great thing about this recipe is it takes about 5 minutes to assemble everything and then you’re off and running. This has been perfect for me since I’ve been working crazy long hours at the visual effects job the last month or so. I haven’t even had time to make my own mayo like I usually do. Luckily, both Tessemae’s and the new Primal Kitchen mayo from Mark Sisson are made from clean ingredients with no sugar added. Perfect for staying Whole 30/21DSD.
Inspired by the Cajun Burgers we posted a while back as well as the recent addition of Crab Cake Deviled Eggs, this was just a natural evolution of the two. Cajun. Shrimp. Salad. When I made this, I barely had time to photograph it before it was inhaled and thus gone forever. I will definitely make this again as it’s the perfect quick meal.
- 1 lb medium Wild Caught Shrimp, cooked and cut into ½ inch cubes
- ¼ cup mayo (for Whole30 we like Tessemae's or Primal Kitchen)
- 1 large avocado, cubed
- ½ cup shredded carrots
- ½ cup shredded purple cabbage
- 1 shallot finely diced
- 1 tbs Tessemae's roasted garlic spread OR 3 large cloves, minced
- 1 tbs fresh thyme leaves
- juice of ½ a lemon, about 2 tsp
- 1 tbs Cajun Seasoning
- Combine all ingredients in a large mixing bowl until evenly incorporated.
- Serve as is or place in a romaine leaf for a tasty wrap
