Earlier this week I wrote a big post summarizing our amazing trip to Pittsburgh to spend some time with our friends Bill and Hayley from The Food Lovers. We had an amazing time to say the least. While I know most of the post talked about the fantastic food we had at restaurants, we also did our fair share of cooking at home. One thing that I made for everyone was something I had been playing with for a month or so. A caramelized banana milkshake. What I like most about this recipe is that you can make it for a myriad of different meals. It works well for breakfast/brunch, snacks and even as a dessert. Also, depending on how thick you want your milkshake, you can add or subtract the number of bananas you use.
- 2 ripe bananas, sliced lengthwise
- 1 can full fat coconut milk
- 2 tbs sunflower seed butter
- 2 tbs coconut sugar
- 3 tbs grass fed butter
- 1 tsp cinnamon
- pinch sea salt
- 1 cup ice
- Melt butter in a large skillet over medium heat.
- When butter has melted, add coconut sugar and stir occasionally until sugar and butter are bubbly.
- Add bananas to the butter mixture and cook on each side until carmelized. About 3 minutes per side.
- Add coconut milk, ice, cinnamon, sea salt, sunflower seed butter, cooked bananas and pan drippings to blender and blend until smooth.
- Enjoy
